Apple Hand Pies

 
I made & wrote up this recipe post a few years ago & never posted it. I wanted the recipe today since we went apple picking this morning.  Figured I would just go ahead & post it.  Enjoy making some!

I’m sure I have pictures somewhere… if I find them or we make them & they turn out well today I will post some.   I combined a few different recipes into making this. Among them I recall these….

Apple Somethings (Hand Pies)

Ingredients

  • 2 Pie Crusts divided into 8 balls Storebought or equivalent recipe homemade

Filling

  • 6 cups Diced apples
  • 2 tbsp Lemon Juice (or half of one lemon)
  • 0.5 cups Sugar
  • 4 tbsp Flour
  • 0.25 tsp Salt
  • 1 tsp Vanilla
  • 1 tbsp Cinnamon

Crumb Topping

  • 0.5 cups Flour
  • 0.5 stick Butter
  • 1 cup Brown Sugar
  • 0.5 cups Oats Whole Rolled – not Instant
  • 0.25 tsp Salt

Egg Wash

  • 1 Egg Fork Whipped

Instructions

Pie Crust

  • Make your pie crust or thaw pre-made crusts & divide into 8 crusts. Set aside to chill.

Preheat Oven to 400

    Apple Filling

    • Mix peeled, diced apples, lemon juice, sugar, flour, salt, vanilla & cinnamon. Set aside.

    Crumb Topping

    • Combine cold butter & flour (I used a food processor) and add brown sugar, oats & salt

    Assemble Pies

    • Roll out 1 eighth of the pie crust into a loose circle. Mound apple mixture in the center & cover with crumb topping. Pull up the side & pinch together. This is a rustic pie so it doesn't need to be perfect! Continue with remaining 7 pies.Brush top of the crusts lightly with egg wash.

    Bake 25-30 minutes until crust is golden & apples are cooked.

      Ok first – yes it isn’t Tuesday!   Second – hey – a new video!  It’s about time!  The most challenging part?  Finding enough time when a 5week old, a 5year old and a dog are all quiet (oh & when my hubby isn’t home, because then nobody is quiet)!

      My friend Kristen (dineanddish.net) asked for some Silhouette help recently.  She was trying to make labels for some homemade grape jelly.   Simple right?  Well…. printing on a label & then cutting it sure is simple on the Cameo – IF you know how to do it!   So I wanted to share how I quickly helped her out.

      Here is one of her labels – didn’t it turn out gorgeous?

      And here is my how-to video.   We used a regular cut label that is meant to cut 3 different paper to make a layered label and turned it into a print & cut label with custom text & the printed purple border.  She used Silhouette’s Printable Silver Foil paper.

      Homemade Baked Mac ‘n Cheese

      I am posting my homemade Mac ‘n Cheese recipe for my friend – she asked for it!

      This isn’t crazy healthy on it’s own – but it is Mac n Cheese! Depending on your family you can definitely health it up thought. I have tried “real” cheese & honestly – it isn’t as good. I use the low-fat Velveeta, skim milk & whole grain pasta. Other ideas – you can add chunked tofu, pureed white beans, diced cauliflower, spinach or other veggie including frozen peas to make it a bit healthier.

      Something yummy

      I belong to a local running group the KC Express.  They are a great group of women who put on the Mother’s Day 5k every year here in Kansas City and also host weekly walking & running groups (Saturday morning).  At our monthly meeting last night we had our annual “Top Chef” competition.  I cooked this year & thought I would share my recipes on here too.  The chili was popular but the cookies won in my unofficial polling!  My 3yr old loves them (dark chocolate chips & all).
